So named in honor of the style of wine that Florian’s grandfather liked to drink, back when dry was a matter of taste, not chemical analysis. So, it’s designated trocken (dry) even though it’s technically feinherb (it has 13.1 g/l residual sugar). This Saar Riesling comes from diverse plots of 80- to 90-year-old vines in the most westerly section of the original Ayler Kupp. “Senior,” Florian says, has two faces: the voluptuous and the elegant, and the combination makes for a serious and seriously drinkable wine.
